Veganuary Challenge: Week 1

There’s a challenge going on right now called Veganuary. Being vegan myself, I really can’t participate on this challenge; but, what I can do is help others find inspiration in maybe giving a vegan diet a go, however temporary it may be. So, for the month of January, I will be featuring vegan recipes from the cookbook Mississippi Vegan by Timothy Pakron that I was gifted this past Chrismas by my sister’s mother-in-law. (Very cool of her to think of me.) Tune in every Friday to see how I fair when I attempt a recipe from the book.

I have been sifting thru the pages and I have a few I want to try out all ready and listed. I’m hoping I’ll be able to find some of the items that I have not heard of at my local grocery stores. If not, then I have to improvise.

If you have been following me on Instagram, you will know that I love Asian food and it’s what I cook most often. So attempting some recipes from the cookbook will be new for me to try. This will be a great way for me to broaden my vegan recipe list. Maybe, just maybe, the rest of my fam might like it enough to switch to a vegan diet too. I’m not going to lie, it’s tough at times having to cook vegan and non vegan dishes everyday. It can put a dent in the wallet for sure if I’m not meal planning.

Final Words

I will sift thru the pages a few more times with the fam and see what interest them as well. They are pretty good with trying the dishes I cook to see if it’s something they want to continue eating, and that’s all I can ask for. Everybody in my fam has a choice, always, because I believe a change can be more successful when the person truly wants it. So, what I can do is expose them to new food and let them decide if it’s for them. If they want to switch, then I’m there to support them.
