Month of October Weekly Vegan Food Diary: 1st week

A Monday and a 1st of the month this October last week. What a great combination to start something new for myself and for my blog.  I do have a Veganism section on my blog, so I decided to create a weekly food diary for this month of October.  Since I’m not working at my optimal self lately, I think this is a great opportunity to share and record my food intake so I can remedy the issues by means of food.  “You are what you eat” as the famous quote goes. My diet is definitely a work in progress.

For a week, I have been mindfully recording my food intake.  Im going to get it out of the way now, I do not eat healthy nearly enough as I ought. If given the chance to eat vegetable or not, I mostly likely will choose not.  I may be vegan but it doesn’t mean I eat healthy, all of the time.  I accept that I’ll never really be 100% healthy with my food choices, but what I can do is improve it where I can.  So here it goes, my first week food diary for the month of October 2018.

Monday, 10/01/18

  • 2 cups of Home Brewed Starbucks Coffee with Organic Coconut Milk and Organic Coconut Sugar
  • 1 glass of Organic Tropical Juice
  • Organic Oatmeal with Cinnamon and Chocolate (Cooked Stove Top)
  • Fortune Cookie (It said I will be moving to a new house soon!)
  • Organic Blue Tortilla with store bought Guacamole
  • Fresh Mandarin Oranges
  • Grilled Portabella Mushroom Burger with Lettuce and Tomatoes
  • Baked French Fries with Organic Ketchup
  • Fresh Grapes

Tuesday, 10/02/18

  • 2 cups Home Brewed Starbucks Coffee with Pea Protein Milk and Organic Coconut Sugar
  • 1 glass of Organic Tropical Juice
  • Ginataan -store bought (Made with Coconut Milk, Sweet Potatoes, Taro, Plantain Bananas, Tapioca Pearl, Jackfruit, Purple Yam, Glutinous Rice, and Sugar.)
  • Grilled Mushroom Burger with Tomatoes, Lettuce, and Spinach
  • Fresh Grapes
  • Skyflakes Crackers
  • Pita Chips
  • Homemade Bowtie Pasta with Cashew Butter, Lemon, Spinach, Mozzarella Cheese and Roasted Acorn Squash

*Note: I have 3 portabella mushroom in a pack so I might as well cook it before it goes bad – portabella mushroom burger is so easy  to make!

Wednesday, 10/03/18

  • Campbell’s Well Yes! Cajun Red Bean Vegetable Soup

  • Tater Tots (the kids wanted some so I ate some too)

  • 1 Glass of Organic Tropical Juice

*Note:  The cold virus started attacking me Tuesday, but it didn’t attack full force until today, every part of my body hurt with each movement.  I was feeling quite sick this day so I slept most of the day and didn’t have much of an appetite.

Friday, 10/05/18

Saturday, 10/06/18

  • Panera Green Smoothie (Running a whole lot of errands and got hungry/thirsty on the go.)

  • Green Tea Kombucha
  • Homemade Bowtie Pasta (Left over: made with Cashew Buter, Lemon, Roasted Acorn Squash, Spinach, Almonds, Garlic)
  • Homemade Banana Walnut Bread
  • Mini Oreo Cookies

Sunday, 10/07/18

  • 1 cup Home Brewed Starbucks Coffee with Pea Milk and Organic Coconut Sugar
  • Organic Oatmeal with Coconut Milk and Pea Milk, Cinnamon, and Chocolate (Cooked on Stove Top)
  • Sweet Potato Tempura Roll (At the Mall)
  • Starbucks Green Tea Frappuccino with Coconut Milk (Finally got a freebie.  I haven’t been buying for a while.)
  • Kettle Potato Chips

*Note: I was not really hungry for dinner.

There you have it!  My week long food diary.  Everything in this food diary is vegan.  I definitely eat way too much carbs and not enough vegetables. I will add that I started to get sick from a cold virus this week and it shows.  Despite over the counter cold meds, I just had to go thru the whole process of ridding the virus.  It definitely took me down this week; but, I’m starting to cook again, after I went thru a whole month of just lagging for reasons unknown to me. 

Still sick with the cold/cough virus but I’m definitely seeing the increase in energy regardless.  Let’s see what the next week has in store.
